Consumption Propensity of Korean Adults and Nutrient Contents of Domestic Commercial Products for Plant-Based Milk Alternatives

Abstract
This study investigated the consumption propensity and nutrient contents of plant-based milk alternatives (PBM) to provide basic data for the appropriate use of PBM. Consumption propensity of PBM was identified through an online survey targeting soy milk consumers (SMC) (n=350) and other PBM consumers (OPBMC) (n=150). The subjects enrolled were male and female adults (18¡­64 years). Nutrient contents of milk (n=41), soy milk (n=69), and other PBM (n=53) were collected by nutrition labeling. Compared to the SMC group, the ratio of subjects in their 20s and 30s was high and subjects aged 50¡­64 years were low in the OPBMC group (P<0.0001). Positive acceptance of soy milk factors, including taste, nutrition, and health efficacy, was moderate among SMC. The rate of recognizing that cow¡¯s milk and soy milk are similar or same in nutrient contents was 42.9%, and this rate was higher in males than in females (P=0.003). On the other hand, degree of positive acceptance for OPBM taste, nutrition, and health effects was moderate among subjects. Comparing cow¡¯s milk and OPBM, there was a high rate (38.7%) of recognizing that the nutrient contents are similar or same. Cow¡¯s milk provided a certain level of nutrients without any different by-products; however, soy milk or other PBMs varied greatly depending on raw material or brand. Therefore, it is necessary to improve the quality and provide more information on PBM actively. Furthermore, our results indicate that it is necessary to choose a PBM with a nutrient composition suitable for one¡¯s specific needs.
